Whisky Wife Wheat II

Well, my hot brewing model liked Whisky Wife Wheat, but I really think that hefes are not really a style of beer that interests her as much as Belgium Wit beers.  She likes her Shock Top and Blue Moons, and my Whisky Wife Wheat should really be more along those lines.... lighter with less of that hefe clove / banana taste and more citrusy orange taste.

At the same time, one of my intentions in 2010 is to start moving away from Mr. Beer ingredients.  One thing I am doing (since I still have Mr. Beer ingredients) is making WWW both with Mr. Beer and with a completely non-Mr. Beer formulation.  We'll see which one the beer model prefers.

Made a starter for the yeast. 2 cups water, 1/2 cup DME, and just a touch of yeast nutrient.

Brewed it up later same day. The mash was a sticky mess. Ended up putting in more zest than I had originally planned. Thinking of also "dry hopping" another half to full oz. Did not cool down wort as far as I should have (about 74).

Am a bit afraid that I added too much orange zest based on the amount I see in every other recipe. Fermentation really slowed down quick. I'm a bit afraid I cooled it down and stalled the fermentation.

Bottled up with 4oz honey in about 1.5 cups water. 1.017 FG for .685 ADF Wonder how much of that is due to the oatmeal in the mash. Got 17 12 oz bottles and 3 liter bottles. Sample was great. Seems like just the right amount of orange and the creaminess of the beer seems perfect compared to blue moon. Think this will turn out really good.

Tried the last of the bottling bucket side-by-side with blue moon. Mine has more orange, but I assume that will fade with time. I can taste more oats in Blue Moon, and mine might be just a tad thicker. Other than that, mine did taste quite a bit like a flat blue moon. A little time and some carbonation, I think it will be really close and that my Beer Model will really like it.

The PET bottles are not firming up as well as I would expect. Hope my yeast has not given up on me. I'll leave this carbing longer, I think.

Ok, I'm an idiot. Last night, I looked at the honey, and discovered that I had used sugar free honey to prime this beer. Had to open all the bottles and add table sugar in the Mr. Beer suggested amounts.

Tried the LB. No complaints. Seems like just the right amount of orange peel and coriander. The Belgium aroma may be a bit strong right now, but my experience with Monkish Wit makes me think that may subside a bit. Think it is very close to Blue Moon (which was the goal).

Compared one side-by-side with the Monkish Wit. I am happy to say this one is better. Smoother mouth-feel with a nicer orange flavor. Both are good beers. This one is just better.
