Eric's Red Ale
For my first birthday after beginning SheppyBrew, my beer model got me the Bewitched Red Ale w/Mellow Amber brew pack from Mr. Beer. On the next Presidents' day, I used it to make Eric's Red Ale.
The beer has evolved over several batches, but has always been deep-redish amber in color with a heavenly malty flavor. I have been moving it from almost no bitterness to a bit higher on the BU / GU ratio, but it is still more on the malty side of the ratio. It has always run about 5.5 % Alcohol (by volume).
This one of my favorite beers, and I plan to make sure I have this "on tap" at all times. I have discovered that I like this beer much more after 2 months of conditioning than I did at just 3 weeks conditioning.

I have decided to try to create a red beer without Mr. Beer ingredients. My tastes seem to be moving toward hoppy beers, so I am expecting Eric's Red II to be more hoppy. Not sure if the new one will replace Eric's Red or if I will still brew this one. Depends on how I like #2 I guess.

Mash Profile Steep grains as desired (30-60 minutes)
Remove grains, and prepare to boil wort Recipe Notes
Bring 1 gallon water to 155F. Add specialty grain in sack to water and steep for 35 minutes. Remove grain sack and let drain into wort. Bring wort to boil and add hops. Boil for 20 minutes. Add honey during last 5 minutes of the boil. After the boil, remove from heat and add HME / UME to the wort. Cool in ice bath to less than 80F, and then add to fermenter. Top off with water to 8.5 liters. Aerate and pitch yeast as usual. http://www.fermentis.com/FO/pdf/HB/EN/Safale_US-05_HB.pdf Ferment 2-3 weeks. Batch prime with 2.50 oz table sugar.
